Thistle of another kind. The only edible parts are the bud before the flower blooms. Mostly the tender inside leaves are eaten by scraping the leaves to include with the small "heart", for a tasty delicacy. If the bud is left to mature and bloom, this thistle is majestic and a feast for the eye.
